If you’re anything like me, my favorite recipes are the ones that require little effort or clean up and are so delicious they make me want to dance in the kitchen upon the first bite!

THIS is one of those recipes!

Healthy, refreshing and most of all – easy! Chances are, you probably have all of these ingredients already on hand and begging to be used.

The following is based off of 1 serving, but can be doubled or tripled if you’re extra hungry or feeding friends. Enjoy!

Tomato, Avocado & Roasted Corn Summer Salad vegan recipes kara mortellite text

Ingredients:
  • 10-15 Fresh Baby Tomatoes
  • 1 ripe medium Avocado
  • 1 roasted Corn on the Cob
  • 1 Lime
  • Handful of chopped Fresh Cilantro
  • Pinch of Flake Salt or Sea Salt
  • Fresh Ground Black Pepper
Preheat your oven to 350 degrees. Once it’s ready, place your unhusked (see, I told you this was easy!) corn directly on the middle oven rack. Set timer for 20-30 minutes.

While the corn is roasting, begin by washing the baby tomatoes, slicing them in half and tossing into a medium sized bowl. Then, slice your avocado in half, removing the pit.

Using a sharp knife, slice into the flesh of the avocado first vertically and then horizontally careful to not pierce through the skin. This will create a checker-like pattern, and slices can be as thick or as thin as you’d like.

Take a spoon and gently scoop between the skin and flesh of the avocado, tossing your avocado pieces into the bowl with the tomato.

Once the corn has finished cooking, remove it from the oven. Carefully (it will be hot) peel back the husks in the opposite direction of the corn.

Holding the husk in one hand, place the tip of the corn against a cutting board and carefully begin slicing the corn off the cob. Toss corn into bowl and mix all ingredients together.

Add a pinch of salt and some fresh ground pepper. Zest some lime over the salad and then squeeze half a lime into the bowl.

Finely chop a handful of fresh cilantro, add it into the mix and continue tossing. Give it a taste, add extra herbs, spices or lime as needed!

Notes:

If you have a grill, grilled corn would work wonderfully as well and be super yummy.

If you prefer the salad has an extra kick, add finely chopped red onion or shallot! I find that if I want leftovers, I prefer this recipe sans onion.

And lastly, if you’re looking for some extra protein, cook up some quinoa, let it chill and toss it in!
